The soy sauce gelato combines the creamy, rich texture of traditional gelato with the deep, savory notes of soy sauce. Carefully balanced, the recipe ensures the soy sauce complements rather than overpowers the sweetness of the dessert. “I drew inspiration from fine dining applications where they would make soy sauce caramel and I thought that was a good way to start”, said Damien, Founder of Denzy Gelato. We wanted to create something that surprises people and redefines their understanding of what gelato can be.”
